HEARTY LASAGNA SOUP

1 lb ground beef
1/4 tsp garlic powder
2 (14 oz) cans seasoned beef broth with onion
1 (14 1/2 oz) can diced tomatoes
1/4 tsp italian seasoning
1 1/2 cups uncooked mafalda OR spiral pasta
grated parmesan cheese

in a large skillet, cook beef with garlic powder until browned; drain. add broth, tomatoes and italian seasoning. bring to a boil. stir in pasta. cook over medium heat for 10 minutes or until pasta is tender. stir in 1/4 cup cheese. serve with additional cheese if desired.

WHY CARBONATED BEVERAGES ARE CALLED “SOFT DRINKS” – “Soft drink” classically referred to nearly all beverages that did not contain significant amounts of alcohol (hard drinks). The term “soft drink” is now typically used nearly exclusively for flavored carbonated beverages thanks to advertising. Flavored carbonated beverage makers were having a hard time creating national advertisements due to the fact that what one calls their product varies from region to region (soda, pop, fizzy drinks, coke, minerals, etc). In order to get around this problem, for national or international advertising campaigns, these manufacturers agreed on using the term “soft drink”.

MEAT & POULTRY

COOKING POULTRY – Despite what you may have heard, poultry does not need to be washed before cooking. Wipe it with a damp cloth, if needed. If it has been frozen, wipe it with absorbent paper to remove any excess moisture. Always be sure that poultry is cooked through. To test for readiness, pierce the flesh at the thickest part with a fork. If the juices run clear then it is cooked.

CHERRY AND COCONUT PANCAKE MIX

1 cup all-purpose flour
2 tbs sugar
1 tbs baking powder
1/2 tsp salt
1/4 cup whole wheat flour
1/2 cup dried cherries
1/3 cup sweetened shredded coconut*

combine all-purposeĀ flour, sugar, baking powder and salt in a medium bowl. pour into a 1-pint wide-mouth jar with a tight-fitting lid and pack down firmly. layer remaining ingredients attractively. pack down lightly before adding each layer. seal jar.

cover top of jar with fabric. attach gift tag/recipe with raffia or ribbon. attach large spatula if desired.

Makes 1 (1 pint) jar

*if desired, toast coconut first. to toast flaked coconut, spread in a thin layer in a heavy-bottomed skillet. heat over medium heat, stirring, until coconut turns golden, about 2-3 minutes. remove from skillet immediately. cool before using.

CHERRY AND COCONUT PANCAKES

2 tbs plus 2 tsp unsalted butter
1 egg, beaten
1 1/4 cups millk
1 jar cherry and coconut pancake mix
maple syrup OR cherry preserves

melt butter in a large heavy-bottomed skillet or griddle over medium heat. pour into a medium bowl, leaving a thin film of butter in the skillet. mix beaten egg and milk into butter in bowl; set aside.

pour cherry and coconut pancake mix into a large bowl. stir well. add liquid mixture and stir to mix. (do not beat). pour 1/4 cup portions of batter into the skillet. cook over medium heat 2-3 minutes on each side, or until golden. serve with maple syrup or cherry preserves.

makes 10 pancakes

MISCELLANEOUS ETCETERAS

When a recipe calls for a greased casserole, spread a piece of bread with butter and grease the casserole. Use it cut up in the casserole or as topping.

If you want to bake your casserole ahead, bake all the required time except the last 20 minutes. Cool and store casserole in the refrigerator, covered. Allow 10 minutes extra baking time for re-warming, plus the last 20 minutes required.

Crushed potato chips make an excellent topping for many casseroles.

When using glass baking pans, always lower the temperature by 25 degrees.

Keep shelled nuts in the refrigerator. This way, they will keep indefinitely.

Warm shelled nuts before chopping. It brings out the natural nut oils.

To make nutmeats come out whole, soak whole nuts in salted water overnight before cracking.

Cut dates up fine with wet scissors after measuring.

Put leftover bread crusts and heels in your blender for always-handy bread crumbs. Store in a covered jar after drying out.

Heat lemons before extracting juice for twice as much juice.

You may used canned mandarin oranges whenever a recipe calls for fresh. Drain the mandarins and marinate in fresh orange juice for at least an hour.

If you place oranges in a hot oven before you peel them, no white fiber will be left on the orange.

To scald milk without scorching, rinse pan in hot water before using.

Light or excessive heat causes deterioration in vanilla. Always keep the bottle in which it comes.

If honey turns sugary, stand the jar is a pan of hot water until it liquifies again.

Corn syrup or honey may be substituted for half of the amount of sugar called for as long as the liquid in the recipe is decreased by one fourth the amount.

To measure molasses, grease the cup in which it is to be measured.

CROCKPOT CHICKEN, BROCCOLI, CHEESE & TATER TOT CASSEROLE

1 can cream of chicken soup
1 (12 oz) can evaporated mik
1/2 tsp ground black pepper
1 tsp garlic powder
1 1/2 tsp seasoned salt
3 cups shredded cheddar cheese
1 (10 oz) can chicken breast chunks, drained
1 (10-11 oz) pkg frozezn broccoli florets, thawed and drained
1 (28-32 oz) bag frozen tater tots

mix the soup, milk and seasoning in a large mixing bowl. add 2 cups of the cheese, the chicken and broccoli and stir to incorporate add the tater tots and stir. make sure that all the tater tots are coated with the mixture and incorporated well.

line a 3-4 qt crockpot with aluminum foil. just because this has alot of cheese, you may also want to use a crockpot liner for easier cleanup. pour the mixture into the lined crockpot. place folded paper towels on top of the crockpot and secure with the lid. this will keep the extra condensation from the lid during the cooking process from watering down the dish. cook on LOW for 5-6 hours, or on HIGH for 3-3 1/2 hours.

around 15-30 minutes before the end of cooking time, sprinkle the remaining cheese evenly over the top. this will melt the cheese nicely. if you turn the crockpot off and remove the crockery (if yours has a removable crock), the casserole will start to cool down and set faster.

serve with you favorite veggie or side salad…or serve alone!

FROZEN PEANUT BUTTER TORTE

1/2 cup flour
1/3 cup quick-cooking oats
1/4 cup sugar
1/4 cup butter, softened
1/4 tsp baking soda
1/2 cup crunchy peanut butter
1/3 cup light corn syrup
2 tbs honey
1/2 gallon vanilla ice cream, softened
3/4 cup chopped salted peanuts

combine the first 5 ingredients; mix well. pat into a greased 9″ square pan. bake at 350 degrees for 15-17 minutes, or until lightly browned. cool to room temperature. combine the peanut butter, corn syrup and honey; carefully spread 1/2 over crust. spread with 1/2 the ice cream. drop remaining peanut butter mixture over ice cream. sprinkle with 1/2 the nuts. top with remaining ice cream and nuts. freeze until firm, 3-4 hours. let stand 5-10 minutes before serving.

9-12 servings

SLOW COOKER CIDER

2 (4″) cinnamon sticks
1 tsp whole cloves
1 tsp whole allspice
2 qts apple cider
1/2 cup packed brown sugar
1 orange, sliced

place cinnamon, cloves and allspice in a double thickness of cheesecloth; bring up corners of cloth and tie with a string to form a bag. place cider and brown sugar in a slow cooker; stir until sugar dissolves. add spice bag. place orange slices on top. cover and cook on LOW 2-5 hours. remove spice bag before serving.

makes 2 qts

COMPOST CUPCAKES

5 tbs unsalted butter, softened
1/2 cup sugar
1/2 cup unsulfured molasses
2 eggs
1 1/4 cups flour
1/4 tsp salt
1 tsp baking soda
1/2 cup hot milk
1/2-1 cup crushed salty snacks (such as goldfish crackers and pretzels – use your imagination!)
1/2-1 cup sweet snacks (such as cacao nibs and skor chips – again, use your imagination!)

cream butter and sugar.

add molasses and eggs.

add the flour and stir until just combined.

dissolve the baking soda in the hot milk.

stir in the hot milk mixture.

stir in salty and sweet snacks until combined.

divide batter evenly between 12 cupcake liners.

bake at 350 degrees for 20 minutes, or until slightly springy to the touch.
