BARBECUE-FLAVORED MEATLOAF

1 slightly beaten egg

1/4 cup plus 3 tbs barbecue sauce

1 tbs Worcestershire sauce

2 tsp seasoned salt

14 tsp garlic powder

1 1/2 c bran chex cereal

1 1/2 lbs ground beef

1/3 c finely chopped onion

1/4 c finely chopped green pepper

Combine slightly beaten egg, 1/4 c barbecue sauce, Worcestershire sauce, salt, and garlic powder in a lg bowl.

Add cereal and stir until coated. Let stand a few minutes. Stir again to break up cereal slightly.

Add ground beef, onion, and green pepper. Stir well.

Form loaf in loaf pan. Bake at 350 degrees for about 65 minutes. Take from oven and spread 3 tbs barbecue sauce over top. Bake 10 minutes more.

GRAPE NUTS MEATLOAF

1/2 c grape nuts cereal

1/2 c water

1 lb ground beef

1 slightly beaten egg

2 ts Worcestershire sauce

1/4 c finely chopped onion

3/4 tsp salt

1/8 tsp pepper

1/4 c catsup

Mix cereal and water. Allow to stand about 1 minute.

Add ground beef, egg, Worcestershire sauce, onion, salt, and pepper. Mix well.

Press into greased loaf pan. Spread catsup over top.

Bake at 350 degrees for about 1 hour.

CINDERELLA’S CREAMY MEATBALLS

3 lbs meatballs (small, favorite recipe OR frozen)

2 cans cream of chicken soup

1 c sour cream

salt and pepper to taste

1 can milk

1/2 tsp nutmeg

1/2 c dry sherry

Cook meatballs and drain (or thaw precooked meatballs). Combine and stir remaining ingredients in a large crockpot. Add meatballs, stirring occasionally until hot.

BETTER-FOR-YOU SIMPLE SLOPPY JOES

1/2 onion, chopped

1 1/4 lbs ground turkey (at least 90% lean)

1/2 c ketchup

1 tbs brown sugar

1 ts garlic powder

1 tsp mustard

ground black pepper to taste

6 whole-grain buns OR English muffins, split

Coat a lg skillet with nonstick cooking spray and warm over med-high heat. Add the onion and saute until softened and browned, about 5 minutes. If the onion starts to stick, mist with additional cooking spray.

Add the ground turkey to the skillet and cook, breaking apart the meat and mixing occasionally, until the meat is cooked and browned, about 5 minutes.  Drain visible fat from the pan.

Add the ketchup, brown sugar, garlic, mustard, and pepper to the skillet and mix thoroughly. Cook for an additional 3 minutes.

Toast the buns while the meat is cooking.

Divide the mixture between 12 toasted bun halves, garnish with optional greens, and serve open-faced.

LOADED NACHO CASSEROLE

1 lb lean ground beef

1 lg onion, diced

1 green bell pepper, diced

2 (14 oz) cans diced tomatoes, undrained

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can pinto beans, drained and rinsed

1 (11 oz) can corn, drained

1 (8 oz) can tomato sauce

1 (4 oz) can diced green chilies

1 (1 oz) packet taco seasoning or 2 tbs homemade taco seasoning (recipe below)

1 (10 oz) bag tortilla chips

2 c shredded cheddar cheese

Preheat oven to 350 degrees. Coat a 9″x13″ baking pan with  nonstick cooking spray.

In a lg skillet over med heat, cook the beef, onions, and peppers until meat is no longer pink and veggies are tender. Stir in the tomatoes, beans, corn, tomato sauce, chilies, and taco seasoning and bring to a boil. Reduce heat to low and let simmer 20 minutes (the mixture will be kind of thin).

Layer half of the tortilla chips in the bottom of the prepared pan, crushing slightly with your hands to make them fit. Top with half of the meat mixture. Repeat layers and then top with shredded cheese.

Bake, uncovered, 20-25 minutes, or until cheese is melted and the casserole is heated through.

HOMEMADE TACO SEASONING

1 tbs chili powder

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp crushed red pepper flakes

1/5 tsp dried oregano

1/2 tsp paprika

1 1/2 tsp ground cumin

1 tsp salt

1 tsp black pepper

In a small bowl, mix together all ingredients. Store in an airtight container for up to 3 months.

 

SPICY MEAT LOAF

1 egg, slightly beaten

3/4 c (18 crackers) crushed ritz crackers

1/3 c salsa verde

2 tbs snipped fresh cilantro

1 tbs snipped fresh parsley

8 oz lean ground pork

8 oz lean ground beef

3/4 c sour cream

1/4 c salsa verde

1/2 c (1 med) chopped tomato

In a lg bowl, combine egg, crackers, 1/3 cup salsa, cilantro, and parsley. Add pork and beef; mix well. Lightly pat meat mixture into an 8″x4″x2″ loaf pan.

Bake in a 375 degree oven about 40 minutes or until internal temperature registers 160 degrees. Spoon off any fat.

Meanwhile, in a small bowl stir together sour cream and 1/4 cup salsa; spread over meat. Bake for 5 minutes more. Let stand for 10 minutes before serving. Sprinkle with tomato.

SWEET-AND-SOUR APPETIZER MEATBALLS

1 egg, slightly beaten

1/2 c cooked rice

1/3 c (1 small) finely chopped onion

1/4 c fine dry bread crumbs

2 tsp brown sugar

2 tsp lemon juice

1/4 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper

1 lb lean ground beef

1 c ketchup

1 c grape jelly

1/4 c  raisins

In a lg bowl, combine egg, cooked rice, onion, bread crumbs, brown sugar, 1 tsp of the lemon juice, garlic powder, salt, and pepper. Add ground beef; mix well. Shape into forty 1″ meatballs. Arrange meatballs in a 15″x10″1″ baking pan. Bake in a 350 degree oven for 15-20 minutes or until done. Drain off fat. Transfer meatballs to a large serving bowl.

Meanwhile, for sauce, in a med saucepan combine the remaining 1 tsp lemon juice, the ketchup, jelly, and raisins. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally. Pour sauce over meatballs; ;toss gently to coat.

Makes 40 appetizer-size meatballs

HAMBURGERS IN SAUCE

 

grilled or fried hamburgers

1 (12 oz) can tomato paste

1/2 cup sugar

1/4 cup green pepper, chopped

salt and pepper, to taste

1 cup water

1/4 cup onions, chopped

2 tbs vinegar OR lemon juice

1 small bottle ketchup

5 tbs brown sugar

2 tbs Worcestershire sauce

Combine all ingredients (except hamburgers) in a large mixing bowl.

Place in a crockpot with the hamburgers.

Cook on MEDIUM setting until ready to serve.

 

BAR-BE-QUE MEATBALLS

1 1/2 lbs ground beef
3/4 cup applesauce
3/4 cup crushed corn flakes
1 med onion, finely chopped

SAUCE:

1/2 cup ketchup
1/2 cup barbeque sauce
1/2 cup water

mix ground beef, applesauce, corn flakes and onion together. shape into small balls and place in a 9″x13″x2″ baking dish. in a small bowl, mix together ketchup, barbeque sauce and water. pour sauce over meatballs. cover pan with foil and bake at 375 degrees for 45 minutes. uncover and bake an additional 15 minutes.
