CREAMY GREEN BEANS

2 cups frozen french-style green beans
1 tbs chopped onion
1 tbs margarine
1 tbs flour
1/2 cup plain yogurt
pepper to taste
1/4 cup shredded american cheese

place beans in a microwave-safe baking dish; microwave on HIGH 4-5 minutes, or until tender. set aside.  

in a saucepan, saute onion in margarine for 1 minute. stir in flour until smooth; cook & stir for 1 minute. stir in yogurt. add beans & pepper. top with cheese & let stand until melted.

SLOPPY JOES

1 1/2 lbs hamburger
2/3 cup finely chopped onion
1/2 cup diced celery
1/4 cup diced green pepper
1/2 cup ketchup
1 tbs worcestershire sauce
1/2 teaspoon salt
1/8 tsp pepper

in a 2 qt casserole, crumble beef. add onion, celery, & green pepper. cover; microwave on HIGH 10-12 minutes, stirring every 3 minutes. drain meat well. add ketchup, worcestershire sauce, salt & pepper. cover; microwave on HIGH 7-8  minutes until hot.

LIMAS IN CHEESE SAUCE

1 (10 oz) package frozen baby lima beans
1/3 cup chopped onion
1 tablespoon butter OR margarine
1 tablespoon flour
1/4 teaspoon dry mustard
dash pepper
1/3 cup milk
1 cup grated cheddar cheese, divided
1 (4 oz) can mushroom stems and pieces, drained
1/2 cup seasoned croutons

prepare limas as directed on package. place onion and butter in small bowl. microwave on HIGH 1-1 1/2 minutes, or until tender. stir in flour, seasonings and milk. microwave on HIGH 45 seconds-1 3/4 minutes, or until thickened, stirring once or twice. combine sauce, 3/4 cheese and mushrooms, stirring until cheese melts. add to limas. sprinkle with croutons and remaining cheese. microwave on HIGH, uncovered, 1 1/2-2 1/2 minutes, or until cheese melts.

MICROWAVE BRUSSELS SPROUTS

1 1/2 pounds brussels sprouts
1/4 cup water
1/4 teaspoon celery salt
pinch pepper
1/2 cup shredded cheddar cheese
1/3 cup finely crushed cornflakes
1 tablespoon butter OR margarine, melted

place the sprouts in a 1 1/2 qt microwave-safe dish. sprinkle with celery salt and pepper. cover and microwave on HIGH 8-10 minutes or until tender, stirring and rotating a quarter turn every 3 minutes. drain. sprinkle with cheese; microwave on HIGH 1-2 minutes or until cheese begins to melt. combine cornflakes and butter; sprinkle over sprouts.

CHEESE SAUCE

2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 cup milk
1 cup (4 oz) shredded sharp cheese
cayenne pepper

in a 1 quart bowl, place butter, flour and salt. microwave on HIGH for 2 minutes, stirring after 1 minute. gradually stir in milk. microwave on HIGH for 6-7 minutes, stirring every minutes until thick and bubbly. add shredded cheese and a dash of cayenne pepper to white sauce. stir to melt cheese.

MICROWAVE SCALLOPED POTATOES

3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
3 1/2-4 cups thinly sliced potatoes (about 3 medium)
2 tablespoons minced onion

place butter in 1 qt microwave-safe dish. microwave on HIGH 1-2 minutes or until melted. blend in flour and seasonings. gradually stir in milk. microwave on HIGH 8-10 minutes, stirring after 4 minutes.

layer 1/2 of the potatoes , onion and sauce in a greased 2 qt dish. repeat layers. cover.

microwave on MED-HIGH 24-28 minutes. let stand 5 minutes.

CHILI RICE

1 pound ground beef
1 medium onion, chopped
1/2 medium green pepper, chopped
1 clove garlic, minced or pressed
1 (16 oz) can whole tomatoes, cut up
1 (15 oz) can kidney beans
1 cup instant rice
1 1/2 teaspoon salt
1 teaspoon sugar
1 teaspoon chili powder
1 cup shredded cheddar cheese

crumble ground beef in 2 quart casserole. add onion, green pepper and garlic. cover. microwave at HIGH 4-6 minutes or until the meat loses most of its pink color and veggies are tender. stir to break up meat. drain. add remaining ingredients except cheese. cover. microwave 16-20 minutes, or until rice is tender, stirring after half the time. sprinkle cheese over top. cover. let stand in minutes.

BASIC MEATLOAF

1 1/2 pound ground beef
3/4 cup chopped onion
1/2 cup fine bread crumbs
1 egg
4 tablespoons ketchup, divided
2/3 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon paprika

mix together ground beef, onion, bread crumbs, egg, 2 tablespoons ketchup, milk and seasonings. mold into loaf. spread remaining 2 tablespoons ketchup evenly over top of loaf. put in loaf pan and cover with plastic wrap, turning back small area to vent. microwave on HIGH 29-31 minutes. rotate 1/2 turn after 15 minutes. let stand 10 minutes.
